"It's not horrible"....

After 10 years I have learned that this is a compliment from my husband when he is talking about dinner - particularly something new I made. So it went tonight. I made meatballs - not too challenging for sure but I have never made them before. I got the idea from a friend who was making them not too long ago when I dropped my daughter off for a playdate. I am really trying to expand our dinner selections. It was getting really bad there for a while (quesadillas, tacos, spaghetti, breakfast for dinner, etc) Tonight I made the meatballs, served them with rice and corn.

Meatballs

3/4 lb lean ground beef
1 egg white
4 soda crackers, crushed
1 can cream of mushroom soup made according to soup directions on the can

Mix first 3 ingredients together and form into balls.
Cook in skillet until brown. Mix in soup. Cover & let simmer for as long as needed (I did about 2 hrs), stirring occasionally. Put soup in the same skillet you brown the meat in so any meat 'crumbs' will be in the mushroom gravy.

There is just 3 of us so I am sure you need to adjust everything for a bigger family. But it was good and I basically cooked everything about 4 pm and we ate about 6. I used the Uncle Ben's brown and wild rice combo that comes in the orange packet and cooks in 90 second. Brilliant idea! I find that the rice is usually too expensive but I found it at Super Walmart for much less than the grocery.

I am not sure what I will do tomorrow night to top this...

I could eat tacos and taco salad every night, my hubby not so much. I feel for you on the expand he dinner menu thing.
The great thing about meatballs is that they are super easy to make and you can put them in so many different things. I will make a big batch and then make sweet and sour meatballs over rice, meatball grinders, swedish meatballs over mashed potatoes and of course spag and meatballs. :0)
